A Fun Recipe for Kids

Thanksgiving Pudding
Ingredients:
2/3 cup minute rice
1 cup apple juice
1/3 teaspoon cinnamon
½ cup packed brown sugar
¼ cup raisins
1 cup diced apples
1 tablespoon butter
2 egg whites
3 tablespoons white sugar
Directions:
Mix the first 6 ingredients in  a sauce pan. Bring to a boil and simmer 6 to 10 minutes, until liquid disappears. Add butter. Put into dessert dishes. To make the meringue topping beat 2 egg whites until stiff. Add 3 tablespoons sugar and beat. Top each pudding with meringue and place under the broiler until light brown. Eat hot or cold.
Yield: 4 servings
