Recipe

Quesadillas
Ingredients
3 6-inch flour tortillas
Vegetable cooking oil
1 cup shredded White cheese
1 cup shredded yellow cheese
1/2 cup finely chopped tomato
Parsley or cilantro leaves

Directions
Lightly fry each tortilla in 1/4 inch of hot oil until crisp and golden, turning once. Drain on paper towels. Sprinkle with combined cheese and top with tomato. Microwave on HIGH 1 minute or until cheese is melted. Cut each tortilla into quarters. Garnish with parsley or cilantro leaves. Serve warm.
Yield: 3 servings.
Note: If using a conventional oven, place tortillas on a cookie sheet and bake at 350 F for 10 minutes or until cheese is melted.
